Grandma’s Snow Pudding

This sweet snow pudding dessert is made with milk, Gelatin, coconut, and whipped cream. It is my grandmother’s recipe. Use your favourite mould and serve with homemade raspberry sauce. Allow about 4 hours for the pudding to chill.

Ingredients

Original recipe 8 servings

1 cup white sugar

1 envelope (1 tablespoon) unflavored gelatin

½ teaspoon salt

1 ¼ cups milk

1 teaspoon vanilla extract

1 ⅓ cups flaked coconut

2 cups heavy cream

1 (10-ounce) package frozen raspberries, thawed

1 tablespoon cold water

2 teaspoons cornstarch

Directions

Step1

Stir sugar, Gelatin, and salt together in a medium saucepan. Add milk; cook and stir over medium heat until Gelatin is dissolved. Remove from heat and chill until partially set.

Step2

Stir once and add vanilla. Fold in coconut and heavy cream.

Step3

Pour into a pudding mold. Chill until firm, about 4 hours.

Step4

To make raspberry sauce: Pour raspberries with juice, into a medium saucepan. Cook over medium heat until boiling. Mix together water and cornstarch; stir into the raspberries. Boil rapidly for one minute, stirring constantly.

Step5

Cool before serving with pudding.
